Grilled Cabbage "Steaks"

Okay, we know these are not quite grilled steaks made out of meat. But whether or not you're vegetarian, these cruciferous "steaks" are potentially even better. 

Hear us out and give it a try before you knock it: Cabbage is a chameleon ingredient, good and good for you and affordable. We not only love it in our sides, we love to use cabbage as our main dish too, because it is just that versatile.

To make sure your cabbage steaks stay in one piece on the grill, pick the most compact head of cabbage when you're out shopping. The tighter the leaves are, the better they'll hold together when cut.

All you need to make grilled cabbage steaks is cabbage, oil, salt. Everything else is optional, but it's the optional things that make life what it is. We top this grilled cabbage à la wedge salad with bacon, blue cheese, AND ranch dressing for good measure. Leave the bacon out of the picture if you prefer to keep these completely vegetarian; skip the ranch and cheese if you're vegan and simply top it with your favorite condiments and toasted nuts instead. 

Grilled cabbage is an excellent "blank canvas" to carry out any other flavors that you may have your heart set on, so feel free to customize as you see fit to find your true cabbage soulmate. Spoon it with honey mustard dressing, dollop it with garlicky romesco, or drizzle some prik nam pla for a spicy kick. Other fantastic options would be a buffalo-style cabbage, a Caprese-style cabbage, or a lemon-garlic dressed grilled cabbage with lemon and garlic. You really can't go wrong! 

While the cabbage won't stay super crispy, it will reheat nicely as leftovers: just store it in the fridge for up to 3 days, microwave it when you're ready to eat, and top it with all new toppings when serving. If you'd rather transform it into another dish, that charred cabbage flavor would add a whole new layer of intrigue to a bowl of cabbage soup.

Ingredients
1

large head of cabbage, cut into ½"-thick rounds

Extra-virgin olive oil, for brushing

Kosher salt

Freshly ground black pepper

Pinch crushed red pepper flakes

Chopped cooked bacon, for serving

Crumbled blue cheese, for serving

Freshly chopped scallions, for serving

Ranch dressing, for serving

Directions
  1. Heat grill over medium-high heat. Brush cabbage steaks on both sides with oil and season with salt, pepper, and red pepper flakes. Place on grill and cook until tender, about 5 minutes per side.
  2. Top with bacon, blue cheese, and scallions and drizzle with ranch dressing before serving.
